Thanks for the update Dylan. Sounds like you're learning a lot, in addition to working really hard.
Speaking of nutrition and cycling, one of the funniest things I saw in Sardinia recently were the Italian riders who whose breakfast consisted of nothing but coffee, bread, chocolate croissants, and nutella. Meanwhile I was busily eying the bacon, eggs, and sausages!

I'm pretty sure they have never heard of a bacon and eggs breakfast over here, just does not compute.
Just yesterday they opened the climb behind my house which is super exciting. The Relais du Mont du Chat is considered the hardest paved climb in France. It was used in Le Tour once and on that stage Raymond Poulidor dropped some little known Belgian by the name of Eddy Merckx on the savage gradients. I live about 20m into this climb, and at the start they have a sign giving some of the details of the climb, I've attached a picture. Keep in mind this is the steady "easy" side the other side is far worse.
