I've got my wifes friend Kiara (canadian olympic mountain biker) visiting, and I was just telling her how good it was.

I know why vegan baking is so good - everything you take out (eggs, butter, etc) you just replace with sugar!

Hey Josh,

glad you liked the cake so much. Here is the original recipe:
-----------------------------------------
2 bananas (ripe ones, no green ones!)
1/4 cup of water or soymilk
1/2 cup veg oil
1 cup brown sugar
1 1/4 cup flour
1 tsp baking soda
Dash of salt
Walnut pieces and/or choc chips
-----------------------------------
I usually replace the oil with more bananas or apple sauce as I don't want so much fat in the cake.

I blend the bananas, water, (oil) and sugar together.
Sift dry ingredients together.
Fold dry into wet.
Butter (margarine) pan, pour in mixture.
Bake at 350F for 1 hour.

For the chocolate icing I just melted dark chocolate and poured it on top. Cucumbers as decoration and there you go ...
